been on my diet for a while, lost another stone and a half, Weetabix for breakfast, ham sandwich for lunch or maybe cheese sandwich and then steak and chips down the pub for tea or whatever is cooked for me at home when I eventually get in. only drink the occasional energy drink (maybe two or three a week) but mostly drink water and cups of tea now. getting some exercise in, in the form of cycling whenever I can but not a lot lately because of work.

I found some great pork shoulder for $1.80 / lb US.
I love Carnitas. I have a pressure cooker.
I cut that sucker into fist sized lean pieces. Browned it in onions, chilis (Serrano) and olive oil until it had a bit of a crust.
Added my favorite spices, water as necessary, and pressure cooked the thing for an hour.
    AMAZING!
Pulled pork in less than 1.5 hours. I love my pressure cooker.

Sooo... Tonight it was Pulled Pork and BBQ sauce on a bun. Later, pulled pork on a tortilla with salsa freska.
    I did good.
If you don't have a pressure cooker. Think about it. So fast, so good!

I havent moved for more than an hour unless it involved another beer.......

I spent all my life in what used the be Mexico before the Mexican American war. The food is outrageous in these areas.
Tex-Mex, and Cali-Mex food have been my favorites. I not sure I want to live without BBQ, Mexican food, lobster Baja Style, and a good steak.

Let it all simmer nicely whilst the mashed potatoes and minted peas are doing. then do the gravy in the pan with the liver.
