pull the temp sender out of your old 50cc head.. and stick it in the S6... it is completely safe to run no thermostat and actually very easy to...
do you mean the temp sender, or the thermostat??? the temp sender will tell you if its cooking.
I never run a thermostat... but then I live in Queensland where it gets quite hot
I am having trouble with bogging also. My driveway it a a bit steep, and it gets to 7000rpm going up the hill and then bogs down... goes...

Wouldnt worry about the up gear kit... rollers I would say would be around 4-4.5g but you would have to do a road test for sure... other than that...
