Would I need to buy a new variator or can I use the one on the ped and just fit new rollers

rollers work the same in all bikes, regardless of of it is a 4 or 2 stroke, lighter rollers will give a better accelleration, heavier will give a higher top speed, the ones the manufacturer uses tend to be the best for the standard variator, you could go a little lighter say 13gram. a 4 stroke scooter is never going to be "sporty" regardless of how much you spend on "tuning" parts. if you want a fast 4 stroke 125 you are gonna have to spend a lot and be prepared for regular rebuilds.....

Are slider weights better to use than roller weights

slider weights are much better, but as accy says, they cost a fair bit. bigger auto engines use them, stuff like quad bikes with CVT and snowmobiles etc...
