    would I gain anything by fitted a racing clutch or clutch Spring along with a racing variator and Kevlar belt on my 125 4 stroke ped

    You won't gain anything at all if the bike has a rev limiter.

    This is my peds clocks,I can get 60 mph on the flat and 70 mph downhill

    Are you sure that you are reading MPH and not KPH?
