my ped has just started overheating randomly.the same thing happened last year and i changed the coolant and then it was fine. today i drained the coolant out and put new coolant in and left the cap out to let the air get out. however it seems to have mkade it worse. apparently iot could be a problem with the thermostat? could i take the thermostat off without taqking the cylinder head off?

No, the thermostat is inside the cylinder head.

Don't forget the rad doesn't have a fan, so it has no way of cooling itself other than moving forward.

Not being funny, but are you SURE it's overheating? Any steam or water coming out anywhere? Just thinking it might be a dodgy connection at the temperature sensor or a dodgy sensor.

Don't trust that light. It's a lightbulb, not a mechanic.

no i dont notice anything different. i just dont wanna risk anything. it wasnt as bad today it came on once at the top of a really fat hill where the revs were like dieng out at the top. it rides fine but when the light comes on i like go real slow or stop and itll go off again.

Theromostats can and do jam open ,a jamemed stat or late opening stat
wont let the water flow around the engine and no water means a sized engine ,NEVER .run a thermostate on a tuned engine ,take it out and bin it

I always run a stat, the only thing worse than a barrel getting too hot is one staying cold, cold seizes are a nightmare. do yourself a favor and clean your water pump out, flush the coolant system out (a hose pipe up a water pipe tends to do it) and get a new thermostat in there and she should run ok.
