sorn lifts when you shove tax on it buddy.

couple weeks from when they get it , you should have it through post. if the seller fails to notify they are at risk of a £1000 fine and court appearance . to be honest if i was a seller i would be sending that v5 off that same day or the next day for sure.
call them mid week see if they have recieved thats what i would do.

Is it ready for the road ?
Like TC said, the sorn will be lifted the moment you tax it, you will have to go into the post office to tax it if you only have the new keepers slip though

sorn is cancelled when the dvla gets the log book , that's why if you buy a car or bike that's on sorn you have to re sorn it once you get it put in your name

It can all be done online these days. No need to go to a post office. You can tax it with a v5c/2 (green slip) so if you are waiting for the v5 before taxing it don't bother. You can tax it now 24hrs a day.
The fact you are taxing it with the new keepers supplement alerts them that the vehicle has been sold and you use the document number on the green slip NOT the v5 as they are different.
Just follow the instructions and answer the questions by ticking the boxes until you get to the bit with the "new keepers supplement".
If selling a vehicle you can also notify them online as well so no need to wait or send the v5 in as they then tell you to destroy it.
Assuming the seller posted the v5 off quickly I would allow app 3 weeks bearing Xmas/New Year in mind.
You could always contact the seller and ask if it has been sent off and if not tell him that he can do it online and you should get it back in a week (I did)

Yeah it's best to save or print the confirmation of tax/ins as it can take 5 days or so to appear on the DVLA computer and the Askmid (insurance) computer especially if you are using main roads to get home.

You can SORN it using the document number on the V5c/2 (green slip) After clicking "start now" just click on the "I don't have the V11 reminder just the registration certificate or new keeper supplement". https://sorn.service.gov.uk/
Don't worry too much as they allow some time before going after someone for no SORN and even then you would get a warning letter first.
