I dont bother using torque settings on engine mount and shock just make sure they are tight enough and what bike are you putting engine in?

What i normally do is take the belly panel off and put something underneath the frame to hold it up and put my front wheel touching a wall so my bike doesnt move when im putting engine in

On my bws i just rest the belly pan on a plastic stacking box and then manhandle the engine into place.

On an aerox its a bit easier as the engine lugs are on the top of the engine not the front - assuming the engine is on the centre stand you can just lift the whole bike over the top and it will rest on the engine cases while you wiggle the big pivot bolt into place.

You can torque it up but you're not going to damage anything but tightening it right up by hand.
