Few questions about new setup plans

Hi there. As the title says. For those that remember my topic on the polini evo II, I decided to give up on that one and go for something milder (just slightly). It's as following (minarelli horizontal - aerox):

-Stage6 Racing Cylinder (MKI or II, I probably have gotten myself an MKI already)
-Stage6 HPC Crank
-Yasuni C16 exhaust*
-21mm carb with either stock reed block and carbon reeds or some aftermarket reedbox (probably got myself the stage6 R/T viton or the VForce3)
-Stage6 Sport Pro variator*
-Stage6 Torque Control clutch*
-Stage6 R/T 433 clutch bell*
-Stock transmission*

(things marked with an * are what I already have)

so the questions are as follows:
1st, as usual, what is your opinion/ Would you change anything/ tips;
2nd, are Arreche carbs any good? I got a deal on a 21mm one cheap together with the cylinder and some other parts

And I think I have a few more but can't remember right now
