Dyno changes + setting up

Heya all, i am looking towards to 70kit my bike, despite all the arguments it has caused but i am going to do it. Right so i have a relative that owns a tuning shop with car / motorbike dyno, so i will fit the kit etc and use the dyno to set my bike up, but my question is that to set it up obviously i will need to make jet changes (the dyno will tell me this) and roller changes but how will i know to do roller changes? running at a flat spot or? and what sort of problems may or may not occur while i am doing this, i could really do with all the help i can get so if any problems happen i can just show my relative all my end of information for him to work from if you guys understand?
