First of all is this somehtign i can do easily and without the possibility of breaking the ped?
Secondly, how much should i pay a mechanic to do this for me?

My ped (2001 aprilia mojito custom 50cc) already does atleast 40mph with me on it (i weigh approx 8.8 - 8.9 stone and tbh i dunno how thats possible becuase shouldn;t it be restricted to 30mph?

    It is derestricted.
Over 30mph means its not restricted

That’s what I though at first but couldn’t it just be because I’m light?

Any other easy way to tell?

    That is how you tell.
I'm super light too. But they do stop at 30mph regardless
